Chocolate and raspberry chia pudding

Delicious dessert!

Ingredients

• 15 gms chia seeds
• 80 mls unsweetened almond milk
• 1 heaped tsp (5-6 gms) cocoa powder
• 40 gms frozen (or fresh raspberries), defrosted
• 1 - 1 1/2 tsp double cream
• 5 gms walnuts or other nuts (optional), chopped

Method

Put the cocoa powder in a small serving bowl (portion for 1) and use a little of the almond milk to make a smooth paste, before adding the rest of the milk and mixing well.
Mash the raspberries (I microwave them first for 1 minute if still frozen) and add to the mix along with the chia seeds. Stir really well, and leave for a couple of minutes, then stir again so it's all well mixed, and there aren't any "clumps" of seeds.
Leave in the fridge for a couple of hours or so (or overnight if you want).
To serve, add a little double cream and a few chopped nuts (I think walnuts work really well).
Eat and enjoy!

It's 200 cals, and has 11 gms of fibre, so only 2 gms carbs net! What's not to like?!

    Love it! I think it’s just fine within 5 or 10 minutes of assembling.

    I found this delicious. Serve with a dollop of plain yoghurt and top with nuts and seeds-almonds and sunflower seeds or walnuts. Also added psyllium husks to thicken but used fewer chia seeds. Think you could do this with coconut milk too.
