Cauliflower Pizza

Almost as good as the real thing! The slices are “pick up-able” Great served with salad.

Ingredients

• for the base
• half a medium cauliflower (about 400g)
• 20g ground almonds
• 20g freshly grated parmesan
• 1 egg
• salt, pepper and oregano
• for the topping
• half a tin good quality tinned chopped tomatoes
• squeeze tomato puree
• salt, pepper oregano/basil
• 100g grated mozzarella

Method

Whizz the cauliflower into "rice" in a food processor
Place in a covered bowl and microwave for 5 mins
(warning, this smells pretty nasty, but don't panic!)
Remove cover and allow to cool
When cool, put in a clean tea towel and squeeze as much moisture out as you can (this is really important if you want to avoid a soggy bottom!)
Beat the egg and add the cauliflower, almonds, parmesan, and seasoning. You should end up with a crumbly but dryish mixture.

Tip this onto a baking tray lined with greased baking parchment and form the mixture into a pizza base with slightly raised edges.
Bake at 180 for about 25-30 until nicely coloured.

Whizz the tomatoes, puree and seasoning until smooth.
Spread over the base and sprinkle the grated cheese.

Return to the oven until the cheese is bubbling and brown.

Obviously you can add additional toppings if you wish!

    Great recipe, I added mushrooms, yellow pepper, spring onion, black olives, anchovies, and sliced courgettes, my husband loved it too.

    Really tasty, will make this again. The base was really delicious, I just forgot to grease the baking paper.

    Really looked forward to making this recipe as I miss easy, carbs – bread etc.
    It looked great coming out the oven, I added red peppers and mushrooms which worked well. I don’t think I got enough of the water out of the cauliflower before cooking.
    This was a good substitute for real pizza but to be honest, I am not sure about the cauliflower base.

    Very good, I added olives, onion and garlic and it was very good. Quite a lot of work to make the base, but worth it.

    This was delicious. Almost felt like you were eating a scone based pizza. Boyfriend made the base, he did say it was quite labour intensive, but worth it

    This is NOT pizza!
    It is healthy, delicious & BETTER than pizza.

    I would suggest if you are using a 12 inch pizza tray, then increase mixture by 50%.
    My next experiment is to see if mixture freezes (balls).

    pinklady51: I’ve tried a similar recipe and instead of microwaving, I put the blitzed cauliflower rice in a non-stick frying pan and heated it on low for 10 minutes, stirring from time to time. This dried it out enough so I didn’t need to squeeze it out with a tea towel – just mixed cauliflower rice from 1 medium cauliflower with 1 egg, 25g grated cheddar cheese 20g parmesan and a little cayenne pepper. This served two. I’ve done this twice now and although it comes out a little softer than a conventional pizza (more like a scone as MeMe46 says) it is definitely not soggy!

    Next time I am going to put on tree-peony’s topping – sounds great!

    A great recipe. This is now my ‘Friday night pizza’ without the carbs. It’s a worthy substitute.
