Ingredients
• 1 small cauliflower
• 2 eggs beaten
• 1 tspn garlic granules ( or fresh)
• 25g ground almonds
• 25g sultanas
• 15g pistachios chopped
• 15g butter
• 1 tspn chopped coriander
Method
Pre heat oven to 180c, cut cauliflower into florets and blitz in food processor as for cauliflower rice, microwave in covered bowl for 6 mins on high, cool then add beaten eggs, garlic, sultanas, nuts and butter.
Mix to a 'dough' and shape into 6 teardrop shaped naans, put onto baking sheet, brush with a little butter and bake for 15 - 20 mins. Scatter with coriander.
