Bun for One

Best recipe I have found so far.
Can portion out dry ingredients in small containers ready!

Ingredients

• 1 tablespoon coconut oil or butter, melted
• 1 egg, slightly beaten
• 1 tablespoon coconut milk or normal milk
• 1 tablespoon almond meal or hazelnut meal
• 1 tablespoon coconut flour
• 1/8 teaspoon baking soda or 3/8 baking powder
• Sesame seeds for topping, optional

Method

Blend oil or melted butter, egg, milk, almond meal, coconut flour, and baking soda.

Pour batter into a greased 4" cake pan. Smooth top with a dampened spatula. Sprinkle with sesame seeds. Bake for 18-20 minutes in a 350 degree oven.

MICROWAVE METHOD. Grease a 4" round microwave safe ramekin. Cook at full power for 60 - 75 minutes. Cook time will vary depending on how powerful your microwave is.

Make two rolls by dividing batter between 2 smaller ramekins. Cook for about 45 seconds in microwave.

    lovely, although quite moist inside – perhaps I could have cooked it a couple more minutes
    was nice to have something ‘bready’ though, and very very filling – I only had it with a little courgette and avocado and a dab of brie and it kept me full the whole evening

    Please can this be checked I’m pretty sure you won’t microwave it for THAT long….Cook at full power for 60 – 75 minutes. Cook time will vary depending on how powerful your microwave is.

    Whoops 60-75 seconds in the microwave, so sorry! I haven’t tried the oven method yet. I do find it a bit ‘eggy’ so will try with some garlic and Italian herbs next time. Today I toasted half a bun and that was sufficient for me!

    Well what a great recipe, I made the batter in my thermomix, poured it into a ramekin and off to the microwave…. it made enough for 2 meals (my husband thought it was yummy as well) and was very filling. I filled it with some cooked mushrooms, baby spinach, mixed sprouts and red onion and a few seasonings and what a lovely and different take on a veggie burger. I decided to brown it in the pan with the fillings. Thank you for posting it. Now in my favorites 🙂

    Where exactly do youfins almond meal? I can find almond flour but not almond meal?

    I think almond meal is the same as ground almonds and you can get it quite cheaply in Aldi.
