A delicious and filling lunch dish or snack (to share). Enjoy the crunch of raw broccoli. Extremely easy and quick to make.
• 1 Broccoli
• 2 tbl spoon Mayonaise (sugarfree!)
• 1tbl spoon Mustard (preferably coarsely ground)
• 1 tbl spoon Apple Cider Vinegar
• 1 red chilli
• Optional: full fat yoghurt (instead of the mayonaise)
Remove the thick trunk from the Broccoli and keep it for later use. Rinse the rosettes under running water. Divide into bite size pieces, drain and set aside.
Take the red chilli, remove the seeds and chop into very thin slices.
Mix the mustard, mayonaise, apple cider vinegar and sliced chilli into a small bowl. Season (salt & pepper) to taste. If needed use some drops of water to get the required consistency.
You could replace the mayonaise by yoghurt.
NOTE: Of course you can make more dip if required. Just use the same ratio's
