Beetroot and goat cheese salad

Salad greens, carrot topped with tangy Beetroot, creamy goats cheese, a sprinkle of walnuts or pine and balsamic to finish.

Ingredients

• Two handfuls of salad greens of your choice
• Half grated carrot
• Top with 1/4 cup drained canned Beetroot
• 50 grams (two small rounds) soft goat cheese
• X2 walnuts crushedOptional. 1/4 cup tuna flakes packed in water.

Method

Salad greens and carrot as a base then build and stack Beetroot, break up soft cheese and top with walnuts crumbled. Add balsamic for a kick.
Beetroot and balsamic give it a nice strong sweet and sour taste with creamy cheese for decadence and nuts for crunch.
You can exchange one cheese round with 1/4 cup tuna and mix the round through it for more protein.

    Liked this recipe, I used raw beetroot, plenty of sweetness in the carrot. Also I used fetta as that is the cheese I had. Quite filling and will use for lunch often.
