Bacon and Courgetti Frittata

A spicy tasty egg dish, all in one pan.


• 6 medium eggs, beaten
• 1 courgette, spiralised (or just chopped)
• half an onion, chopped
• clove of garlic, crushed
• 3 slices bacon, chopped
• 1 teaspoon chilli powder (or to taste)
• salt and pepper to taste
• 1 tbsp olive oil for cooking


add the oil to a large non stick frying pan, and add the onions, bacon and garlic. Fry for a few mins until the bacon is cooked.

Add the courgetti, and cook for a few more minutes, then add chilli powder, salt and pepper. Mix through.

distribute the stuff in the pan evenly before pouring the eggs over the top. Allow to cook for 5 minutes on a low heat, before transferring to under the grill to cook the top. for 5-10 minutes more. Depending on your grill and how well done you like things cooked.

Cut into slices like a pizza and serve.

    Made this this evening, adding mushrooms & chopped red pepper (from a jar) , gave 2/3rds to my husband, 1/3rd for me, and it was delicious. Will definitely be making it again!
