Asian Chicken Stirfry

Easy to Cook…Delicious to Eat!

Ingredients

• • ½ whole chicken breast – sliced into strips
• • 2 cups Asian greens - Bok Choy & Gai Lan – chopped
• • ½ red capsicum - sliced into strips
• • 2 cups Cauliflower rice – fine
• • 2 birds eye chillies – diced
• • 3 cloves garlic -diced
• • ½ lime – juiced
• • 2cm ginger – diced
• • 1 tablespoon olive oil
• • 1 teaspoon fish sauce
• • Cracked pepper
• • Fresh coriander
• Optional – dollop Greek yoghurt

Method

Marinade sliced chicken in lime juice, oil, chillies, fish sauce, ginger, 1 clove garlic, pepper for as long as possible.
In a food processor, finely grate cauliflower florets with 2 cloves of garlic.
In a hot frypan add oil and fry marinated chicken until cooked and golden brown. Set aside.
In a frypan cover the bottom with water, add Asian greens, capsicum and cauliflower rice. Don’t overcook.
Add cooked chicken to vegetables and warm through.
Plate up, garnish with fresh coriander and a dollop of Greek yoghurt.

    Looks delicious! Another alternative to the bok choy: sliced cabbage.. so delish in stir fry!

    Made this for dinner and just loved it. What a great dish with a punch. It was quick to make and so delicious.. will be doing this again soon
