Almond and apple pudding

Low carb treat for those times when only a pudding will do

Ingredients

• 3 large eggs
• Stevia 4tbsp
• 50grms ground almonds
• Half tsp cinnamon ( or more to taste)
• 450grms apples
• Juice and zest of 1 lemon

Method

Peel, core and dice apples stew with a little water, and sweeten to taste

Separate eggs

Whisk yolks with Stevia till pale and fluffy, add cinnamon , ground almonds, and lemon juice and zest

Whisk egg whites till stiff peaks

Gently fold into egg, stevia almond mixture

Grease a ovenproof dish place apples in bottom, and top with batter mixture

Cook at180c for about an hour or until golden and firm

    I made this at the weekend. It was yum!! A little fiddly and I did use a lot of bowls, but it was well worth it. It’s very tasty and filling and you really do feel like you are having a decadent treat when in fact it is sugar free and very low carb! I added a teaspoon of half fat crème fraiche to mine. I tried uploading a photo from my phone but it wouldn’t let me, sorry!

    Sounds Yummy. How long did you stew the apples for?

    I am the only one in my household on a diet so I made this into 6 individual portions by filling timbales. Out of the freezer into the oven and they are delicious! I also added a little Greek yoghurt with honey to mine and it was fab!

    When you say out of the freezer and into the oven I assume you have frozen the pudding ready prepared but uncooked. At what temperature and for how long did you cook it from frozen.
