Balti Style Curry Sauce

If you don’t like chilli then try this refreshing tomato based curry sauce, the heat comes from the ginger. Good with veggies (these should be pre-cooked), fish, shellfish or chicken (these can be poached in the sauce) – yummy !

Ingredients

• For the spice mix:
• 2 tsp each ground cumin & coriander seeds
• 2 tsp each ginger & garlic powder
• 1 tsp each paprika, turmeric & salt
• Mix these together & store in an airtight jar
• Other ingredients to make the sauce:
• 1 tbl oil
• 1 tin chopped tomatoes
• juice & zest of 1 lemon
• chopped coriander leaves to taste

Method

Fry 1 tbl of the spice mix in the oil for about 1 minute - this step is important to the flavour of the finished sauce as it cooks the spices. Add the tomatoes, lemon. & the meat or pre-cooked veggies of your choice. When all cooked &/or heated through serve with the coriander sprinkled on top.
