Pomlette

so called because I started making a gram flour pancake and put in too much water, so decided to add an egg – it’s a cross between a pancake and an omelette
Great with a multitude of fillings – suitable for breakfast, brunch, lunch or supper.

Ingredients

• 20 grams Gram flour
• 1 egg
• 100 ml water
• 1/4 teaspoon baking powder (optional)
• Seasoning - salt and pepper, herbs that complement whatever your planning to use as a filling
• Oil for the frying pangreat with a wide variety of savoury fillings

Method

Whisk the gram flour, egg and water together - if you do this in a measuring jug, make sure the gram flour doesn't get stuck in the corners.
It's fine without baking powder, but adding some does make the pomlette fluffier.
Add the seasoning & beat again
Leave to stand while you sort out your filling - around 5 minutes, but you don't need to be precise, and start to heat the pan - around 10 inch pan is good.
Use spray oil so your pomlette doesn't stick.
When the pan is hot, pour in the batter, and tip the pan so that it is coated evenly.
When batter is set, loosen the edges and flip the pomlette over to cook the other side.
When it's cooked, add your filling (veg is great, salmon and cottage cheese, cheese and ham....)
Serve on its own or with a side salad

    I was expecting it to be some kind of apple dish (pomme is french for apple). Very disappointing,,,,,
