This is really delicious and filling. But I am allergic to mushrooms so I added a bit of cauliflower instead. Unfortunately the protein rating is quite low.
Veg curry in BSD book p250
Ingredients
• Veg curry with cauliflower rice p 250. 270 calories
• For 3 portions:
• A chopped red onion
• A diced courgette
• A chopped pepper
• 100g chopped mushrooms
• A small cut up butternut squash.
• 2-3 tbsp curry paste
• 400g tin of tomatoes.
Method
Fry a chopped red onion for 8 mins.
Add a diced courgette, a chopped pepper, 100g chopped mushrooms and a small cut up butternut squash.
Add 2-3 tbsp curry paste and 400g tin of tomatoes.
Bring to boil and simmer for 25 mins adding a splash of water if needed.
